If you open any product on your inventory and scroll down to the Product Info section, you will see columns Allowed Min and Allowed Max:

The value you will enter in Allowed Min will show this number on your sales channel, even though the actual stock is below it.

The value you will enter in Allowed Max will show this number on your sales channel,, even though the actual stock is higher.
